Almond Butter Heather Honey Granola Bars


  • 1/2 cup almond butter 
  • 1/3 cup Organic Heather Honey 
  • 1/2 cup coconut oil 
  • 2 cups unsweetened, shredded coconut 
  • 3/4 cup raw, unsalted sunflower seeds 
  • 3/4 cup almonds, chopped 
  • 1/2 tsp. salt 
  • 1/2 tsp. vanilla 
  • 1/4 tsp. coconut oil

Line a 9×9 pan with parchment paper and set aside. Place almond butter, honey and 1/2 cup coconut oil into a saucepan and stir over low heat  (don’t boil!) just until everything is combined. Remove from heat. Stir in coconut, sunflower seeds, chopped almonds, salt and vanilla to the almond butter mixture. Spread in the parchment paper-lined pan and press down evenly. Pour coconut oil in a double boiler, place in fridge for a couple hours until firm. Cut into bars and enjoy! (Store in fridge for best texture.)
