Parmesan-roasted potatoes

Ingredients:

  • 1.8kg floury potatoes , cut in half, or quarters if large
  • 5 tbsp olive oil
  • 2 tsp plain flour
  • Organic Honey & Chili
  • 100g parmesan, finely grated
  • handful parsley , finely chopped
  • 4 rosemary sprigs, leaves finely chopped
  • pinch of grated nutmeg

Heat oven to 220C. Place the potatoes into a pan of salted water, bring to the boil and simmer for 2 mins exactly. Drain well and toss in a little of the oil to coat. Stir the flour, parmesan, herbs and nutmeg together in a dish with a small pinch of salt and toss the potatoes in the mix until evenly coated. Heat a good layer of oil in a shallow, non-stick roasting tray on a hob or in the oven, then carefully add the potatoes to the tray. Turn the potatoes to coat them in the oil and roast for 40 mins, turning once. If they feel like they are sticking to the pan, don’t move them, just leave them for the full time. Roast until golden brown and crisp, and serve straight away.

Apple-Honey Dutch Baby Pancake

Ingredients:

  • 3 large eggs, room temperature
  • 3/4 cup 2% milk
  • 3/4 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 tablespoons butter
  • 2 large apples, sliced
  • 1/2 cup Organic Acacia Honey & Rose
  • 2 to 3 teaspoons lemon juice
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon cornstarch 

TOPPING:

  • 2 teaspoons cold water
  • 1 tablespoon butter

Preheat oven to 400°. In a large bowl, whisk together first 4 ingredients until smooth. Place butter in a 10-in. ovenproof skillet; heat in oven until melted, 2-3 minutes. Tilt pan to coat bottom and sides. Pour batter into hot skillet. Bake until puffed and edges are lightly browned, 16-20 minutes. Meanwhile, in a large saucepan, heat butter for topping over medium heat; saute apples until lightly browned. Stir in honey, lemon juice and cardamom. Mix cornstarch and water until smooth; stir into apple mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes. Spoon into pancake; serve immediately.
