Our ever-liquid Organic Honeydew - also called forest honey - is a honey not made from blossom nectar but from plant juices excreted by plant sucking insects. It is produced from conifers, deciduous trees, grasses and plants in the German Black Forest.

Why Organic Honeydew?

Our Organic Honeydew is richer than many honeys in minerals, manganese, phosphorus, zinc, cobalt and sulfur. In addition, calcium, magnesium, iron and potassium are also present in plentiful quantity, together with polyphenols and other antioxidants and probiotics. Honeydew has a lower amount of glucose than blossom nectar honey, and a greater amount of complex sugars. Because of the lower presence of glucose, Organic Honeydew has a reduced tendency to crystallization and remains liquid for a long time.

Organic Honeydew has a full-bodied flavour and is silky smooth. It has an incredibly distinct and intense aroma of the Black Forest woods, a malty, earthy taste and obvious tangy notes.

It is best consumed every morning, either by teaspoon straight from the jar, spread on your breakfast bun or dissolved in warm water, milk or tea. Organic Honeydew also pairs perfect with cheeses and is an ideal drizzle for salads, desserts and yoghurts.

  • The Romans were the first to use the name “Black Forest”. When the Roman soldiers were walking through Germany and their path was blocked by a dark, dense forest of pine trees they called it “Silva Nigra”, which means “Black Forest” in Latin.

    Then as today the Black Forest attracts aphids which eat the sap on the bark and then secrete a sugar-like substance on the trees which sparkles in the sunlight, hence the name "honeydew". Our bees love the honeydew and collect it to make our spectacular 100% Organic Honeydew which is uniquely different from our other honeys made from flower blossom nectars.

    Organic Honeydew is less sweet, and the colour is darker than flower nectar honeys. One of the flower honeys that perhaps most resembles our Organic Honeydew is our Organic Chestnut Honey.

    All our honeys are stored by our bees in their honeycombs until our beekeepers remove parts of the filled combs without touching the reserves essential to the bees. These honeycombs are created by nature’s most economical builders. Already in 36 BC, Marcus Terentius Varro argued that honeycombs were the most practical structures around and centuries later, Greek mathematician Pappus solidified the “honeycomb conjecture” by making the same claim. Almost 2.000 years later, Thomas Hales wrote a 19-page mathematical proof showing that, of all the possible structures, honeycombs use the least amount of wax. And not only are honeycombs the most efficient structures in nature but the walls also meet at a precise 120-degree angle, a perfect hexagon.

    To ensure absolute purity our beekeepers bottle their local Black Forest specialty from the honeycombs directly on their farms as done since generations without blending, colourizing or infusing, nor do we pasteurize or heat our Organic Honeydew since this destroys all pollen, enzymes, propolis, vitamins, amino acids, antioxidants and minerals. 100 % natural, raw, pure & untreated - Straight from the comb!
