Our honeycombs come directly from the beehive and therefore contain honey in its purest form - unprocessed, natural, and pure. It is best to consume every morning, one piece before breakfast straight from the jar.

Since Acacia honey dissolves easily, it is an excellent sweetener for tea and other drinks, it is also a super choice for fruit salads, vegetables, bread and serves exquisitely with blue cheeses. Acacia Honey has a high fructose to glucose ratio and will therefore not crystalize for a long time. It crystallizes only after years from the harvesting moment.

Originally the acacia tree, also called “false acacia” or botanically correct Robinia pseudoacacia L. originated from North America and was introduced in Germany in 1670 into local castle gardens and parks. It has to be noted that the false acacia is not the same as the acacia with great biodiversity exists in Africa and Australia.

Hexapi Organic Acacia Honey & Honeycomb originates from naturally grown, unplanted and untreated acacia trees in protected forest areas which give less nectar than honey from commercial acacia plantations whose canopies are much bigger, so they receive more sun to produce flowers. 

Since German acacia trees bloom in May when bee populations are still undeveloped, bees cannot entirely use its nectar even though our bees are so busy with it that they have no time taking nectar from other plants. Real natural German acacia honey is rare! 

Annual seasonal and biologic factors also make it also impossible to reproduce our Organic Acacia Honey & Honeycomb exactly from year to year so slight variations in colour and taste may occur – making it a truly enjoyable natural honey.

Beeswax, the material used to make honeycomb, is a truly extraordinary material with some fascinating properties. Worker bees have 8 pairs of wax glands under their abdomen. These glands produce small, flat wax “scales” up to 3 mm long and 0.5 mm deep. When a worker creates comb, they scrape a wax scale from their abdomen using the spines on their pollen basket and passes them to their front legs. Holding the scale in place, they then mix it with saliva by chewing with their mandibles. This adjusts the malleability of the wax, making it more suitable as a building material from which each individual cell is built. Repeated tens of thousands of time, these cells form the comb in a beehive.

In 36 BC, Marcus Terentius Varro argued that honeycombs were the most practical structures around. Centuries later, Greek mathematician Pappus solidified the “honeycomb conjecture” by making the same claim. Almost 2000 years later, Thomas Hales wrote a 19-page mathematical proof showing that, of all the possible structures, honeycombs use the least amount of wax. And not only are honeycombs the most efficient structures in nature and the walls meet at a precise 120-degree angle, a perfect hexagon.
